Recipe Ingredients for potato and vegetable curry

1 head cauliflower
2 zucchini
1 head bok choy
2 tbsp margarine
4 medium potatoes
1 red onion
1 1/2 tsp turmeric
1 1/2 tsp garlic
1 1/2 tsp chili powder
1 1/2 tsp ginger
1 1/2 tsp coriander
1 1/2 tsp cayenne pepper
1 1/2 tsp cumin seed

Recipe Directions for potato and vegetable curry

  1. saute onion and spices in butter.

  2. add chopped vegetables and water, simmer 20 minutes or until done.

  3. serve with lightly toasted tortillas or indian flat bread.
