Recipe Ingredients for Potato and Veg Scramble

5 eggs
3 potatoes
1 green pepper
1 mushroom
1/2 t butter

Recipe Directions for Potato and Veg Scramble

  1. Boil potatoes and allow to cool.

  2. Slice potatoes into a wide pan with butter on medium heat, dice pepper and mushroom and cook until vegetables are done and potatoes have gotten a little color.

  3. Crack eggs over the potato mixture and carefully stir, not breaking up the potatoes too much. Cook eggs 3 - 5 minutes.
