Recipe Ingredients for Potato and Tomato Casserole with Olives and Herbs

1/2 c. fresh basil leaves
1/4 c. fresh oregano
1/4 c. fresh mint
3 cloves garlic
1/4 c. extra virgin olive oil
1 1/2 tsp. salt
1/4 tsp. black pepper
1/2 c. plain bread crumbs
4 medium russet potatoes, cut into 1/4"
10 large black olives
6 small tomatoes, fresh cut in 1/8"

Recipe Directions for Potato and Tomato Casserole with Olives and Herbs

  1. Preheat oven to 400. Places herbs and garlic in processor and pulse until finely chopped. Slowly add 2 T of oil to form thick paste. Scrape paste into small bowl and add salt and pepper.

  2. Place breadcrumbs in a small bowl and drizzle olive oil over them. Mix just until crumbs are moistened.

  3. Brusjh 13X9 dish with 1 T oil. Cover bottom of pan with 1/2 of potatoes, overlapping the slices slightly. Sprinkle half the olives over. Cover with layer of 1/2 tomato slices and then dot each tomato with tiny bit of herb paste. Repeat layering. Sprinkle crumbs over top.

  4. Cover pan with aluminum foil and bake 40 min. Remove foil and bake until juices bubbling and bread crumbs lightly browned, 25 min. more.

  5. Let casserole cool on rack for 10 min so layers solidify. Cut into squares and serve immediately.
