Recipe Ingredients for Potato and tofu red curry

2 potatoes, peeled and chopped
1 c frozen green beans
2 carrots, chopped
1 lb tofu, drained and pressed for 30 minutes
4 tbs red curry paste
1 c coconut milk
1/2 c almond milk
1/4 c thai basil
3 tbs oil

Recipe Directions for Potato and tofu red curry

Saute 4 tbs red curry paste in 1 Tbs oil. Add coconut milk and almond milk and stir until fully combined. Add chopped potatoes and allow to cook, covered, for about 5 minutes. Add carrots and green beans. Cover and allow to simmer until potatoes and carrots are just tender. While curry simmers, add remaining 2 Tbs oil to a sauce pan. Cube drained and pressed tofu and saute in oil until golden brown on each side. Add fried tofu to curry along with thai basil. Simmer 1-2 more minutes to combine flavors. Serve over rice.
