Recipe Ingredients for Potato and Sweet corn Saute with Chicken

1/2 lb boneless, skinless chicken breast
2 potatoes
1 onion
2 tbs lemon juice
2 tbs extra virgin olive oil
1 salt
1 pepper
1 tbs thyme
1 cup corn

Recipe Directions for Potato and Sweet corn Saute with Chicken

  1. Season chicken breasts with salt, pepper, and lemon juice, set aside to marinate

  2. Heat 1 Tbs EVOO in skillet over medium heat

  3. Scrub or peel potatoes, cut into bite size pieces

  4. Cut onion into bite size pieces

  5. Add potatoes and onion to skillet

  6. Let brown for about 2-3 minutes, without stirring

  7. Season with salt, pepper, remaining lemon juice, and thyme

  8. Add corn to mixture

  9. Let cook for 8-9 minutes, or until potatoes and onions are soft and starting to brown

  10. Meanwhile, heat remaining EVOO in a separate skillet over medium heat, add chicken

  11. Cook chicken breast about 5-6 minutes on each side until done

  12. Serve chicken over potato, corn, and onion saute
