Recipe Ingredients for Potato Spinach Lasagna

4 cup Potatoes, Baked, Flesh And Skin
4 tbsp Butter
1 onion Yellow Onion
2 cup Frozen Cut Leaf Spinach
2 cup 4% California Style Cottage Cheese
3 oz Feta Cheese Crumbles
2 medium Egg, Whole

Recipe Directions for Potato Spinach Lasagna

  1. Mix together feta cheese crumbles, 2 eggs and 2 cups of cottage cheese.

  2. Melt butter in saucepan, cook onions until translucent. Add garlic, cook for a few minutes. Add thawed spinach and mix until heated thoroughly.

  3. Slice the potatos into long thin strips.

  4. Spray vegetable oil in 9X6 pan

  5. Layer the potatoes, cheese mixture and spinach mixture.

  6. End with a potato layer, spray lightly with vegetable oil; add salt and pepper.

  7. Cover with foil and cook at 400 for 50 minutes, remove foil and cook another 45 minutes
