Gluten free, vegan lasagna using potatoes, spinach and GF corn pasta and almond cheese.

Recipe Ingredients for Potato and Spinach Lasagna

2.5 cup Pasta Sauce
110 grams Almond Mozzarella Style Cheese
1 serving Veggie Cheese Slice, Galaxy Nutritional
3 cup Spinach
160 grams Trader Joe's Corn Pasta Fusilli 2 oz dry
475 grams Food You Feel Good About Potatoes

Recipe Directions for Potato and Spinach Lasagna

Bring water to boil add 1/4 inch sliced potatoes. Cook gluten free corn pasta as directed. I use this in replace of lasagna pasta. Layer sauce, pasta, cheese, potatoes, cheese, spinach, sauce, potatoes, sauce and end with cheese. Bake for 30 minutes. Make sure to preheat oven to 350.
