Recipe Ingredients for potato and spinach gnocchi

10 1/2 oz potatoes
6 oz spinach
1 egg yolk
1 tsp olive oil
1 salt and pepper, season to taste
4 1/2 oz white flour

Recipe Directions for potato and spinach gnocchi

  1. cook potato, drain and mash

  2. blanch the spinach and shred

  3. tranfer mash onto a floured surface make a well and add the yolk, spinach , salt and pepper and olive oil with a little flour, mix quickly by adding the flour bit by bit until fully mixed and has made a pliable dough.

  4. divide into small balls and squish a little.

  5. bring up to boil a large pan of water.

  6. Cook gnocchi in batches of 6 and they are cooked when they come to the surface drain on kitchen paper and repeat till all gnocchi is cooked.
