A vegan potato and spinach curry cooked in a crock pot.

Recipe Ingredients for Potato and Spinach Curry

2 medium sweetpotato
3 medium white potatoes
1 medium white onion
1 cup green beans
1 cup green peas
16 oz frozen spinach
4 cups of water
2 tablespoons (Hunt's) Tomato Paste
4 cloves garlic
2 tablespoons of ginger
2 tablespoons of olive oil

Recipe Directions for Potato and Spinach Curry

  1. Cube potatoes, chop onion.

  2. In a 2-cup measuring dish, put 2 Tbsp of tomato paste, 4 crushed cloves of garlic, 2 Tbsp of gratted ginger, 2 round tps of mild curry, 1 + 1/2 tsp Paprika, 2 heaped tsp Dried methi leaves, 2 heaped tsp Dried coriander leaves, 1 tsp Salt, 2 Tbsp olive oil, and add water to the 1 2/3 cup mark, and stir into a paste.

  3. Brown onion in pot.

  4. Drop in all the potatoes, layer with green beans, and pour the paste over the ingredients.

  5. Layer this with peas, form 8-10 frozen spinach balls, and place them on the layer of peas.

  6. Add 1 cup of water, cover lid.

  7. Cook 2 hours on high and 3 hours on low.
