Great potato with old fashioned taste but not old fashioned calories.

Recipe Ingredients for Potato Soup

5 cup Potatoes, Boiled
4 cup Garden Vegetable Broth
1 1tsp Olive Oil
1 1/2 cup Onions
1 cup, diced Celery
8 oz Carrots
2 clove Garlic
1/2 cup Soymilk Unsweetened
1 tsp Sea Salt
0.13 tsp Pepper, Black
1/2 teaspoon Thyme
1 tsp Parsley, Dried
1 grams Bay Leaf

Recipe Directions for Potato Soup

Heat olive oil in saucepan over medium heata. Cook onions, carrots, and celery until vegetables are softened. Stir in garlic and cook for another minute. Add broth, potatoes, 1 whole bay leaf, salt, thyme and pepper. Bring to a boil. Simmer, covered, for 30 minutes or until potatoes are soft. Discard bay leaf. Add half of potato mixture to food processor or blender and process until smooth. Return to saucepan. Stir in almond milk and parsley. Cook until heated through. Serve.
