On a cold winter's day there is nothing better than soup to turn up the inner thermostat, whether in a vacuum flask at lunchtime or as an after-school snack. This recipe is also great for filling up hungry teenagers.

Recipe Ingredients for Potato Soup

1 tablespoon butter
1 onion
2 large potatoes
1 1/4 cups chicken stock
1 salt and pepper

Recipe Directions for Potato Soup

  1. The evening before for a lunchbox or during the dayfor an after schoolsnack, heat the butter in a medumsaucepan over mediumheat. Add the onions and cook for about 5 miunnutes until sofened and a little golden

  2. Stir in the potatoes and chieckenstock, Bring to a simmer and cook for about 15 minutes until the potatoes are cooked though

  3. Blend with an immersionblendiner or food procesor. Adjust the seasoning if neccesary.

  4. Serve hot or allow to go cold and then refrigerate in an airtight container until the next day.
