Thick herb soup with carrots, onions and celery

Recipe Ingredients for Potato Soup

1/2 c chopped onion
1 oz chopped carrots
1 oz chopped celery
1/4 tsp pepper
1 lb potatoes
1 cup milk, lowfat fluid 1% milkfat with added Vitamin A
1 can (Campbell's) Cream of Mushroom Soup
1 tsp basil
10 oz water

Recipe Directions for Potato Soup

Peel potatoes and chop vegetables. Boil until tender.Mix mushroom soup and milk in large kettle. Drain vegetables and save water. Add vegetables and seasonings to milk and soup. Add one can (10 oz) of vegetable water. Lightly mash vegetables - you want chunks in the soup. Simmer for 10 minutes, stirring occasionally. Instead of mushroom soup you can make a light white sauce and a can of mushrooms.
