Recipe Ingredients for Potato soup

4 medium potatoes
2 cups chicken broth
1 cup onions
1 tsp. olive oil
57 g cooked bacon
8 oz light cream cheese

Recipe Directions for Potato soup

  1. Peel and dice potatoes.

  2. Cover potatoes with broth and cook until potatoes are tender. While cooking cut 3 slices of bacon and fry until crisp.

  3. Sautee onion in olive oil.

  4. Once potatoes are tender, add onions and softened cream cheese. Simmer until cream cheese completely melts.

  5. Serve with bacon bits on top.
