Recipe Ingredients for Potato Soup

5 medium potatoes, peeled and diced
2 cups of water
1 small onion, chopped
1 carrot, grated
1 tbsp. fresh parsley, chopped fine
1 clove garlic, minced
1/2 tsp. salt
1 can evaporated milk
1/2 cup skim milk
2 tbsp butter
1/2 tsp salt
1/4 tsp white pepper

Recipe Directions for Potato Soup

Combine first 6 ingredients in large soup pot. Fill with just enough water to cover. Cover pot and cook until potatoes are almost done. Pour the cans of evaporated milk, then add half and half (or milk). Bring to a boil. Reduce heat. Cook on low heat for 20 to 30 minutes. Add butter and cook an additional 10 minutes. Salt and pepper to taste
