Yummy, slimmed down, potato soup!

Recipe Ingredients for Potato Soup

2 tbsp extra-virgin olive oil
1 yellow onion, diced
4 russet potatoes
1 cup plain yogurt, non-fat
1/4 pound butter
2 2/3 cup skim milk
1 cup shredded cheddar cheese, reduced fat
1 Salt
1 Pepper

Recipe Directions for Potato Soup

  1. Peel and dice potatoes into 1-inch cubes, boil and drain when tender, about 25 minutes

  2. Meanwhile, cooke the onion in the olive oil over low heat until carmalized

  3. Mash drained potatoes and combine with the remaining ingredients, save some cheese for topping if you choose
