This is a modified version of potato soup that my family has eaten for generations. I added kale and sauage to up the protein and vegitables in it.

Recipe Ingredients for Potato soup.

4 cups water,
4 medium Potatoes
1 large Onion
2 cups 1% milk,
2 tbsp. butter,
1 salt
1 pepper
2 eggs
1/3 cup flour
1/2 tsp. salt
1 pepper
1 lb kale
2 link sausage

Recipe Directions for Potato soup.

  1. Cover potatoes and onions w/ water.

  2. Boil until the potatoes are tender but not falling appart.

  3. Meanwhile cook sausage in a pan, then slice into bite sized peices.

  4. Gently mash the potatoes leaving some bite sized peices. Add kale, sausage, butter, and milk. Season w/ salt and pepper to taste.

  5. Bring soup back up to a low boil.

  6. Meanwhile add together eggs, flour 1/2 tsp salt, and pepper in a small bowl. Drizzle into boiling soup, do no mix, allow to cook for 2 min.

  7. Mix and serve.
