Creamy potato soup- not great for you but, worth it!

Recipe Ingredients for Potato Soup

3 lbs red potatoes, diced
1/2 lb bacon, diced
3 stalks celery, diced
1 medium yellow onion, diced
4 cups 2% milk
3 cups water
3/4 cup butter, unsalted
3/4 cup flour
1 cup heavy cream

Recipe Directions for Potato Soup

  1. boil potatoes, drain, set aside

  2. saute onion, celery and bacon until tender

  3. Add milk and broth, heat until very hot but, not boiling

  4. Stir in 1/2 cup chicken soup base

  5. mix butter and flour in seperate pan until bubbling- allow to bubble for 3 minutes

  6. Add roux to soup very slowly, stirring soup constantly until soup becomes thick and creamy.

  7. slowly add in heavy cream and potatoes.

  8. Serve hot with colby cheese on top for garnish if desired.
