This is my basic potato soup, depending on the day I'll add shredded chicken breast, sausage, turkey bacon or cheese. Be sure to change the calories though!

Recipe Ingredients for Potato Soup

1 medium (2-1/2" dia) Onions
0.5 cup, diced Celery
0.5 cup, chopped Carrots
4 clove Garlic
5 tbsp Butter
1/4 cup Gold Medal All Purpose Flour
1.5 cup Chicken Stock
1.5 cup Milk, Nonfat, Fluid
3 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled
1 oz Worcestershire Sauce
1.5 tsp Mustard Powder
0.75 tsp Celery Seed
0.5 tsp, leaves Thyme, Dried
0.25 tsp Pepper, Red Or Cayenne
0.25 tsp Allspice, Ground

Recipe Directions for Potato Soup

  1. Chop all veggies and throw into a pot.

  2. Saute in butter until soft.

  3. sprinkle in flour and cook, stirring constantly, about 2 minutes.

  4. Add broth.

  5. Add all remaining ingredients allow to simmer and thicken.

  6. Let cook until potatoes are fully cooked, about 25 minutes. Try breaking some up with the back of a wooden spoon to give it a richer texture.
