Recipe Ingredients for Potato Soup

2 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Red, Flesh And Skin, Baked
1 cup Onions
0.25 cup Butter
1/4 cup All Purpose Flour
1 tsp Salt, Table
0.5 Teaspoon Thyme
0.25 tsp Rosemary, Dried
0.25 tsp Pepper, Black
1.5 cup Milk, Lowfat, Fluid, 1% Milkfat

Recipe Directions for Potato Soup

  1. Place potatoes and water in a large saucepan; cook over medium heat until tender.

  2. Meanwhile, in another saucepan, saute onion butter until tender.

  3. Stir in the flour, salt, thyme, rosemary, and pepper.

  4. Gradually add milk. Bring to a boil; cook and stir for 2 minutes.

  5. Add potatoes with cooking liquid; heat through.
