Recipe Ingredients for Potato Soup with Kale and Sausage

2 tbsp olive oil
12 oz turkey sausage
1 onion, chopped
1 garlic clove, minced
1/2 cup dry white wine
6 cups chicken broth
1 1/2 lb red potatoes, peeled and diced
1/4 tsp salt
1/4 tsp pepper
2 cups kale
2 cups green cabbage, shredded
1 salt and pepper to taste

Recipe Directions for Potato Soup with Kale and Sausage

  1. Heat oil in a large pot over medium-high heat. Slice sausage into rounds -inch thick. Add to pot and cook, stirring occasionally, until lightly browned, around 3-5 minutes. Transfer to a plate with a slotted spoon. Add onion and garlic to pot and cook, stirring often, until onion is soft, about 5 minutes (reduce heat if necessary to prevent scorching). Add wine and boil, scraping up any browned bits from pot bottom, until almost evaporated, 1-2 minutes.

  2. Return sausage to pot and add broth, potatoes, tsp salt and tsp pepper. Cover and bring to a boil over high heat. Reduce heat to a simmer and cook until potatoes are easily pierced with a fork, about 15 minutes.

  3. Tear out and discard tough center ribs from kale leaves. Slice the leaves into thin ribbons. Add kale and cabbage to soup and simmer, uncovered, until greens are tender to the bite, 8-10 minutes. Season to taste with additional salt and pepper. Serve at once.
