Breakfast taco mixture of potato, egg, and sausage

Recipe Ingredients for Potato/sausage/egg Breakfast Taco Mixture

4 large eggs
3 oz. pork sausage
1 small potato
1/2 tsp. water
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/4 tsp. salt
1/2 tsp. pepper

Recipe Directions for Potato/sausage/egg Breakfast Taco Mixture

  1. Dice the peeled potato in small chunks. Warm large skillet, add ground sausage, breaking up with a spoon. Add diced potato. Cook this mixture until sausage had browned and potato become tender. May need to add a drop of water if mixture becomes too dry. Add onion and garlic powder.

  2. Mix four eggs, add 1/2 tsp. water, salt and pepper in a bowl. Add this to potato/sausage in skillet. Cook until eggs are done, stirring as needed.

  3. Serve this mixture with a corn or flour tortilla.
