Makes 4 servings



A great way to use left over baked salmon, or to make as a meal in and of itself. Can be served warm or room temperature, making it a perfect summer dish.

Recipe Ingredients for Potato and Salmon Salad

4 medium red potatoes, cut into bite size pieces
6 oz. salmon, cooked dry (baked)
2 tbsp. olive oil
3/4 c. fresh or frozen peas
1/3 c. chopped mint leaves

Recipe Directions for Potato and Salmon Salad

  1. Steam the potatoes until their done. Drain and set in a bowl.

  2. Drizzle olive oil over potatoes and stir until coated.

  3. Add cook salmon in bite size pieces, then the peas (if frozen, let defrost first) and finally, the chopped mint.

  4. Stir it all together, salt and pepper to taste.

  5. The flavor of mint shouldn't be overpowering, but should be strong enough for you to get a hint of it with every bite.
