Potato Salad with Light Miracle Whip

Recipe Ingredients for Potato Salad

2 1/4 pounds potatoes
5 eggs
8 oz Bread and Butter Pickle Chips
1/3 cup onion, chopped
1/3 cup celery, chopped
1 cup light miracle whip
2 tablespoons German mustard
1 salt to taste
1 pepper to taste

Recipe Directions for Potato Salad

  1. Chop potatoes with skin on. Boil potatoes and eggs, until done (12-15 minutes after coming to boil). Last 2 minutes add, onion and celery to water.

  2. Combine miracle whip and mustard, add salt and pepper to taste.

  3. Drain potatoes Peel eggs and chop. Mix potatoes, celery, onion, eggs and pickles. Add miracle whip mixture to potato mixture and combine. Refrigerate several hours.
