Large homemade potato salad. Enough for a crowd.

Recipe Ingredients for Potato Salad

12 med red potatoes (with skins)
9 large eggs (hard boiled)
1 large dill pickles (diced)
1 med vidalia onion (diced)
1 c Miracle Whip
1/3 c yellow mustard
1 tbs dill relish
2 tbs pickle juice
1/2 tsp salt

Recipe Directions for Potato Salad

  1. In a large bowl mix together skinned and dice cooled potatoes, shelled and dice cooled eggs, pickles and onion.

  2. In a seperate bowl blend Miracle Whip, mustard, pickle relish & juice and salt till smooth. Fold mixture over large bowl ingredients till evenly coated.

  3. Sprinkle with paprika if desired.

  4. Makes about 16 (1 cup) servings
