German Style Potato Salad. Can be served warm or cold.

Recipe Ingredients for Potato Salad

6 potato small (1-3/4" to 2-1/4" dia) Potatoes, Red, Flesh And Skin
3 serving Turkey Bacon
4 tbsp Mayo Light Mayonnaise Salad Dressing
1 tbsp Vinegar red wine
1 tbsp Parsley
0.5 cup chopped Scallions

Recipe Directions for Potato Salad

  1. Place potatoes in a large saucepan. Cover with water. Heat on high until boiling, reduce heat to simmer and cook 20-30 minutes longer.

  2. Remove from heat and let cool. When cool enough to handle, cut into bite size pieces.

  3. Cook bacon until crisp and chop parsley and scallions.

  4. Combine the mayonnaise, vinegar, parsley, scallions and crumbled bacon in a bowl. Add the potatoes and stir until mixed well.

  5. Serving size = 3/4 cup
