Recipe Ingredients for Potato Salad

20 red potatoes, small, diced to 1/2" pieces
2 tbsp. olive oil
1 tbsp. vinegar, apple cider
3/4 c. mayonnaise, low calorie
1/2 c. sour cream, low fat
2 celery stalks, diced
1/2 c. red onion, diced
1/3 c. green onion, diced
1 red pepper, diced
1/3 c. black olives, sliced
1 pickle, dill, diced
3 tbsp. parsley, italian (fresh), cut up into small bits
4 eggs, hard boiled

Recipe Directions for Potato Salad

  1. Steam diced potatoes until done (about 15 minutes)

  2. Drizzle with olive oil and vinegar

  3. Add all other ingredients and mix well.

  4. Let cool for at least 2 hours before serving.

  5. Optional: add a bit of dijon mustard and cut back on the mayo.
