Mama's potato salad for a crowd. Best if made the night before and chilled.

Recipe Ingredients for Potato Salad

5 lbs potatoes
2 stalks celery, destringed
2 medium carrots, peeled
1 medium onion
1/4 cup pimento
1/4 cup pickle relish
1/4 cup mayonnaise, Hellman's
1 tsp celery seed
1 tsp black pepper
1/4 tsp salt

Recipe Directions for Potato Salad

  1. boil and peel potatoes. Cut into chunks and cool in refrigerator

  2. Finely chop vegetables and mix together with pimento, celery seed, and pickle relish. Cool in refrigerator.

  3. Add salt and pepper to vegetables and mix into potatoes. Add Mayonnaise and mix well. Refrigerate until serving.
