My homemade potato salad for the picky eater.

Recipe Ingredients for Potato Salad

2 1/2 pounds peeled, diced red potatoes
1/3 cup green bell pepper, chopped
1/3 cup red onion, chopped
2 hard boiled eggs, chopped
1 T Dijon mustard
1/2 c fat free mayonnaise
1 salt and pepper to taste

Recipe Directions for Potato Salad

  1. Peel red potatoes and chop into bite size pieces. Place in pot with water and boil until a fork runs easily through any selected piece.

  2. Chop pepper, onion, and hard boiled eggs. Add to drained potatoes.

  3. Add mustard, mayonnaise, salt and pepper. Stir until well mixed.

  4. Cool for 4 hours before serving.
