Makes 8 servings



Double quantity of the Potato Salad recipe from the Del Monte new potatoes can, but with slightly different dressing (uses less mayonnaise and makes less dressing. In my opinion the recipe as written makes too much.)

Recipe Ingredients for Potato Salad

30 ounces del monte new potatoes (2 cans)
1/2 cup carrots, shredded
1/2 cup celery, chopped
1/2 cup green onion, chopped
2 tbsp sweet relish
1/3 cup hellmann's light mayonnaise
1/8 cup dijon mustard
2 tbsp horseradish

Recipe Directions for Potato Salad

  1. Drain potatoes well. Cut into chunks.

  2. In a large bowl, combine potatoes, carrots, celery, and onion.

  3. In a small bowl, combine mayonnaise, mustard, horseradish, and mustard.

  4. Fold dressing into potato mixture. Blend well.

  5. Best when made a day ahead and chilled overnight.
