AMERICAN STYLE CREAMY POTATO SALAD

Recipe Ingredients for POTATO SALAD

3 lbs. potatoes, scrubbed & cut into 3/4 inch chunks
1/2 cup red wine vinegar
1 salt
1 pepper
3/4 cup mayonnaise
1/2 cup sweet pickle relish
1 tbsp. dijon mustard
1 cup celery, chopped
4 eggs, hard-boiled, chopped coarse
3 tbsp. red onion, minced
3 tbsp. fresh parsley, minced

Recipe Directions for POTATO SALAD

  1. Bring potatoes & 4 qts. water to a simmer in large pot & cook until tender, about 10 mins. Drain. Gently toss warm potatoes with the vinegar, 1/2 tsp. salt & 1/2 tsp. pepper & refrigerate for 20 mins.

  2. Meanwhile, mix mayonnaise, pickles & mustard together. Toss the chilled potatoes with the mayo mixture, celery, eggs, onion & parsley. Season with salt & pepper to taste.
