Recipe Ingredients for Potato Salad

1 1/2 lbs yukon gold potatoes
2 eggs
1/2 red onion
1/4 cup olive oil
1 tbsp chives
1 tbsp parsley
1 tbsp rice wine vinegar
1 tsp salt
1 tsp pepper

Recipe Directions for Potato Salad

  1. Cook potatoes and eggs, dice.

  2. Mix vinegar, salt and pepper; pour over cooked potatos and let absorb for several minutes.

  3. Gently mix in diced onion and minced herbs; gently fold in eggs.
