A "potato" salad that is low cal and taste almost like the real thing. Yum-o! Serving size is approx 210g.

Recipe Ingredients for Potato Salad-- NOT

1 head, medium (5-6" dia) Cauliflower
200 grams Mayo Fat Free Mayonnaise Dressing
58 grams Light Sour Cream
30 grams Dijonnaise Creamy Dijon Mustard
6 grams ranch Dips Mix
6 grams dry fat free creamer
1/2 fl oz Water
140 grams Egg, White
80 grams Celery
6 teaspoon Vinegar Wine White
18 grams Onions, Spring Or Scallions
120 grams Onions

Recipe Directions for Potato Salad-- NOT

  1. Chop cauliflower and steam.

  2. Add mayo, sour cream, dijonnaise, ranch dressing powder, creamer, and water in a blender with 1 cup of the cauliflower. Blend until blended but still slightly chunky.

  3. Drain remaining cauliflower and place in large bowl. Cho egg whites, celery, and onions well; add to cauliflower. Mix in vinegar.

  4. Stir in creamy dressing that you just blended refrigerate for at least 4 hours.
