use no more than 2 potatos. Sometimes I use sweet peas and carrots. I will also use yogurt to cut down on calories/fat

Recipe Ingredients for potato salad - lower fat

2 large potato
20 oz sweet pea
6 oz medium shrimp
2 large egg
15 tbsp mayolow fat version
1 tbsp salt

Recipe Directions for potato salad - lower fat

  1. heat water add potato to cook (or use mircowave)

  2. boil the eggs

  3. cook the shrimp ( how ever you want)

  4. heat the veggies

  5. let everything cool

  6. cut into bite size

  7. mix with mayo

  8. add salt to taste
