Potato salad with a lighter twist...

Recipe Ingredients for Potato Salad lightened up!

1 1/2 lbs potatoes
6 tbsp egg whites
2 eggs
1/2 cup light miracle whip
8 oz 0% Greek Yogurt
1/2 tsp dehydrated onion flakes
1/4 tsp dill
1/4 tsp ground mustard
1/4 tsp paprika

Recipe Directions for Potato Salad lightened up!

  1. Boil potatoes. I used mini potatoes because they needed to be used up so I didn't peel them.

  2. Boil eggs & egg whites until hard (about 10 minutes or so). I used eggies to cook them.

  3. Cool and then chop eggs & potatoes.

  4. Mix dressing, yogurt and seasoning in separate bowl.

  5. Combine and chill before serving.
