Recipe Ingredients for Potato Salad with Hummus-Yogurt Dressing

1 lbs yukon gold potatoes
1/4 cup hummus
6 oz nonfat plain yogurt
1/2 cup finely diced celery
2 tablespoons parsley
1 teaspoon onion powder

Recipe Directions for Potato Salad with Hummus-Yogurt Dressing

  1. Simmer potatoes in a pot of water until tender, about 20 minutes. Drain them, peel them if you wish, and cut into 1-inch pieces. Allow to cool completely before proceeding.

  2. Blend the remaining ingredients together. Fold in the potatoes, and season with salt and pepper to taste.
