6 medium russet potatoes (8 cups diced)
5 celery stalks, thinly sliced
1 small red onion, finely chopped (or chives)
1 cup parsley, finely chopped
1 cup cabbage, finely shredded (optional)
10 1/2 ounce silken tofu
1/3 c seasoned rice vinegar
1/4 c cider vinegar
2 tablespoons stone ground mustard
1 1/4 teaspoon dill weed
1 teaspoon salt
1/2 teaspoon black pepper
3/4 teaspoon turmeric

Recipe Directions for Potato Salad - Foods that cause you to loose weight pg. 153

  1. Steam cubed potatoes or boil potatoes in skins. Make up dressing.

  2. pour small amount over warm, cubed potatoes. Add celery, onions (or chives), parsley and cabbage. Pour some dressing over salad. Toss gently to mix. Chill if time allows.

  3. If the salad is kept for a while, the potatoes will absorb some of the dressing. You may wish to add a Tablespoon or 2 or water to restore a moist, creamy texture.
