Recipe Ingredients for Potato Rosemary Pizza with Feta

260 g white bread flour
130 g whole wheat flour
2 tsp active dry yeast
2 tsp salt
2 tbsp olive oil
600 g red potatoes
115 g feta cheese
10 g fresh rosemary
2 tbsp olive oil

Recipe Directions for Potato Rosemary Pizza with Feta

  1. Combine whole wheat flour with half of the white flour, the yeast, and the salt. Mix thoroughly. Add water and olive oil, and mix until a very wet dough is formed. Add the remaining flour as needed, a little at a time, mixing until the dough forms into a ball and pulls away from the sides of a bowl. Dust a clean surface with the remaining flour, transfer the dough to the surface, and knead until the dough is smooth and elastic (5-10 mins). Transfer dough to an oiled bowl, turning to coat. Let the dough rise until doubled (1-2 hrs).

  2. While the dough is rising, boil or microwave the potatoes until soft. Let them cool until they are easy to handle, and slice into 1/2 cm thick discs.

  3. After the dough has risen, transfer to a floured surface, and divide into 2 equal portions. Form each into a ball, and let them rest, covered, for 20 mins. Preheat the oven to maximum heat (450 or higher). Flatten each ball into a round with your hands and a rolling pin. Transfer each crust to a round pizza pan dusted with cornmeal. Brush each crust with up to 1 tbsp olive oil, top with potato slices, feta cheese, and rosemary. Bake 8-10 mins, or until the crust and feta have begun to brown. Season with fresh ground black pepper, cool 5 mins, slice each pizza into 8 slices, and serve.
