wicked rich and tasty. Hard to believe they get any kind of reasonable grade here at calorie count

Recipe Ingredients for potato rolls

2/3 cup sugar
1 potato
1 1/4 stick butter
6 cups flour
2 tablespoons yeast
1 1/3 cup water
2 eggs
1 1/2 teaspoon salt

Recipe Directions for potato rolls

  1. cook potato and use its water needed for the recipe

  2. mix sugar water yeast let sit to proof

  3. moosh potato with butter and salt add eggs

  4. mix it all and don't bother with kneading much (yay!)

  5. let rise, covered and oiled, an hour

  6. punch and make into lots of rolls. put in pans (I use cake pans--not flat sheets)

  7. let rise again about a half hour or so.

  8. cook for 20 minutes or so at 375
