Recipe Ingredients for potato and red onion frittata

1 red onion
4 tbsp butter
1/2 lb red potato
6 eggs
1/2 cup milk
1/2 cup swiss cheese
1/4 teaspoon basil
1/4 teaspoon oregano
1/4 teaspoon garlic
1/2 tsp salt
1/4 tsp pepper

Recipe Directions for potato and red onion frittata

  1. in a 10-inch ovenproof skillet, saute onion and rosemary in 1 tbsp of butter until tender

  2. add garlic, cook 1 minute longer

  3. remove from pan and set aside

  4. in same skillet, cook potatoes in 2 tbsp of butter until tender and golden brown. remove and keep warm

  5. in a large bowl, whisk the eggs, milk, salt and pepper.

  6. stir in cheese and onion mixture.

  7. melt remaining butter in skillet; tilt pan to evenly coat.

  8. add egg mixture. bake at 350 degrees for 8-10 minutes or until nearly set.

  9. top with potatoes; bake for 3-5 minutes or until eggs are completely set.

  10. let stand for 5 minutes.

  11. cut in wedges.
