Recipe Ingredients for Potato and Radish Salad

1 lb new potatoes
3 tablespoons olive oil
1 tablespoon walnut oil
2 tablespoons vinegar
1 tablespoon mustard, coarse grain
1 tsp. honey
8 radishes, thinkly sliced
2 tablespoons chives, chopped

Recipe Directions for Potato and Radish Salad

  1. Cook potatoes until just tender. Drain and cut any large potatoes in half or quarters.

  2. Make dressing with oils, vinegar, mustard, honey and seasoning. Mix them together thoroughly in a bowl.

  3. Toss dressing into potatoes while they are still cooling and allow them to stand for an hour or so.

  4. Mix in radishes and chives, chill lightly, toss again and serve.
