Great side dish, light and low-calorie

Recipe Ingredients for Potato pumpkin casserole

250 g pumpkin, raw and chopped into small cubes
2 potatoes, chopped
1 onion, small and grated
1 tsp sea salt
1/3 tsp ground black pepper
1/4 tsp ground ginger
1 tsp bay leaf, dry
1 tbsp vegetable oil
1 cup water

Recipe Directions for Potato pumpkin casserole

  1. Turn on the oven to 190C.

  2. In a mixing bowl combine pumpkin with potatoes and onion. Try to chop pumpkin and potatoes into equal cubes.

  3. In another bowl combine oil, water and all spices, add salt (optional).

  4. Pour over the vegetables. Stir well. Transfer all into a square baking pan. Cover with alluminium foil. Bake in the preheated oven about 40-45 min, or until all liquids are evaporated.

  5. Optional, at the end you can sprinkle lightly with a mix of breadcrumbs and 1 tbsp fresh grated Parmesan cheese, but this will change the nutritional information of the meal.
