Indian inspired dish. Shred carrots and potatoes, slice mushrooms and onions. Pre-heat your oven to 350. You will need a rectangular baking dish that is large enough to hold 2 potatoes and 1 carrot shredded for this.

Recipe Ingredients for Potato Pinto Curry Casserole

2 cups pinto beans
2 russet potatoes
1 medium carrot
1 onion
2 cups mushrooms
4 tablespoons margarine
1 cup frozen peas
1 teaspoon cumin
1 teaspoon cinnamon
1 teaspoon paprika
1 teaspoon curry powder
1/4 teaspoon salt

Recipe Directions for Potato Pinto Curry Casserole

  1. Shred potatoes and carrot.

  2. Slice onion in half, then into thin slices.

  3. In a frying pan add the margarine and the onions and saute on medium heat until onions sweat.

  4. Add spices and salt and pepper to taste, stir.

  5. While the onion sautes more add in a large bowl, grated carrots, grated potatoes, peas, pintos ( cooked ones) and sliced mushrooms.

  6. When the onions are starting to brown and have become limp, sweet to taste and covered in spices add to the bowl.

  7. Mix the ingredients up in the bowl so that it looks evenly distributed and then transfer into a baking dish and cook at 350 degrees for 10-15 mins.
