Recipe Ingredients for Potato & Pepper Soup

5 tbsp extra virgin olive oil
4 cloves garlic, sliced
1 onion, chopped
1/4 tsp thyme
1/4 tsp red pepper flakes
8 sweet peppers, chopped
1 carrot, sliced
1 celery stalk, sliced
6 cups vegetable stock
2 lbs yukon gold potatoes, cubed
2 tbsp parsley, chopped

Recipe Directions for Potato & Pepper Soup

  1. Heat oil and add garlic, onion, thyme and red pepper flakes. Reduce heat and sweat.

  2. Turn heat to high, add peppers and cook until slightly carmelized.

  3. Add stock and potatoes and bring to boil.

  4. Simmer covered 30 minutes.

  5. Blend 2 cups and return to pot or partially blend with immersion blender.

  6. Serve garnished with parsley.
