Recipe Ingredients for Potato and Pepper Scramble

1 lb potatoes
1 red pepper, diced
1 onion, diced
1 tsp oregano
1/2 tsp garlic powder
1/2 tsp paprika
1 salt, to taste

Recipe Directions for Potato and Pepper Scramble

  1. Cut potatoes into bite-size pieces and bake for 35-40 minutes until tender.

  2. Sauté in a large skillet the bell pepper and onions with the spices on medium-high in a quarter cup of water for 5 minutes (let the onions stick to the bottom of the pan only briefly so that they will caramelize a little and release their flavor before adding more water).

  3. Add the potatoes. Serve immediately.
