Super-easy and healthy oven-baked fritatta.

Recipe Ingredients for Potato & Pepper Fritatta

3 cups egg beaters
1/4 onion
1/2 bell pepper
3 potatoes
1 tablespoon canola oil
1 1/2 cups reduced fat cheddar cheese

Recipe Directions for Potato & Pepper Fritatta

Saute potato with onions and peppers in canola oil. Add sprays of non-stick spray if more oil needed. When mostly cooked through, transfer vegetables to a 9x12 baking pan, arranging in an even layer. Sprinkle with the cheese. Pour the egg beaters over the top. Bake in a preheated 350 oven for about 30 minutes or until cooked through & eggs are set...eggs no longer jiggle when you give the pan a shake. Do not overcook though, or the eggs will become spongy & dry.
