Recipe Ingredients for Potato Pea Curry

3 large baking potatoes
1/4 c canola oil
2 large onions, diced
1 tbs garlic, chopped
1 tbs ginger, freshly grated
2 1/2 tsp cumin
1 tsp turmeric
1/2 tbs ground coriander
1/2 tbs red pepper flake
3 tomatoes, seeded and diced
3 c chicken stock
2 cup peas
1 tbs brown sugar
1/4 c lime juice, fresh squeezed
1/2 cup fresh cilantro, chopped

Recipe Directions for Potato Pea Curry

  1. Cut the potatoes into 1/2-inch dice. To remove the excess starch, place the potatoes in a bowl and rinse with cold running water until the water runs clear. Drain well.

  2. Heat 1/8 cup oil in a medium saucepan over medium-high heat. Saute the onions until they are brown.

  3. Heat the remaining oil in a large skillet over medium heat. Fry the potatoes until they are golden and add sauteed onions.

  4. Add the garlic and ginger, and cook just long enough to release their aromas, about 2 to 3 minutes.

  5. Remove from the heat and add the cumin, turmeric, coriander, and pepper flakes.

  6. Return the pan to medium heat. Stir in the tomatoes and chicken broth.

  7. Simmer, uncovered, until the potatoes are soft, about 15 minutes. Add the remaining ingredients and cook until the peas are heated through. Adjust the seasonings and serve immediately.
