Recipe Ingredients for Potato Pancakes

8 large Potatoes
1 medium (2-1/2" dia) Onion
1 dash Salt, Table
3 tbsp flour
2 tbsp Olive Oil
2 large Egg

Recipe Directions for Potato Pancakes

  1. Peel and grate potatoes in large bowl.

  2. Chop onion fine and add to potatoes.

  3. Add egg, salt and flour to potato & onion mixture and mix everything together.

  4. Heat griddle/frying pan on high heat with oil.

  5. Scoop mixture onto griddle/pan flatterning pancake mixture. Brown on both sides (flip when the pancake looks dry). Continue adding oil to griddle/pan so pancakes do not stick to bottom of pan.

  6. (Note cooking times are longer than normal pancakes. if cooked too short potatoes are raw and the pancakes will stick together in whatever container you are storing them in). Makes about 24 pancakes
