Potato pancakes from the Joy of Cooking cookbook. I use Simply Potato grated potatoes. Skin apple before grating.

Recipe Ingredients for Potato Pancakes

3 eggs
1 apple
5 tbsp flour
2 cups potato
3 tbsp canola oil

Recipe Directions for Potato Pancakes

  1. Combine grated potatoes and apple, stir in eggs. Sift flour into mixture.

  2. Heat oil in skillet .25 inch deep.

  3. Scoop mixture into spoon, place in oil, pat down so that half of mixture is below oil.

  4. Approximately 3 minutes per side.

  5. Place on paper towels to absorb oil.

  6. Should render 12 pancakes.

  7. *optional: serve with applesauce (calories not included)
