Recipe Ingredients for Potato "Pancakes"

6 potatoes, shredded
1 egg, beaten
2/3 cup pancake mix
1 onion, shredded
2 t cayenne pepper
2 t garlic powder
1/2 t salt
2 t black pepper
10 t corn oil

Recipe Directions for Potato "Pancakes"

  1. Add all ingredients except oil in a medium to large bowl and mix well with hands.

  2. Place contents in a strainer and place over same bowl (extra liquid will drain as you cook them as the potatoes leak liquid).

  3. Put 2 t oil in large skillet and heat over medium heat.

  4. Place approx. 1/4 of mixture in pan and spread gently in a circle on one side. Place another 1/4 cup on the opposite side of the pan. (Cooking two pancakes at once. If you are doing one at a time, then put only 1 tsp of oil in.)

  5. Cook on medium heat for 2-4 minutes per side.

  6. Serve with a tablespoon of applesauce, sour cream, or plain. They are tasty either way.
