Recipe Ingredients for Potato Pancakes

2 lbs potatoes, finely grated and drained
1/2 small onion, finely chopped
3 cloves garlic, minced
2 eggs, beaten
1/2 tsp black pepper
1 tbsp parsley flakes
2 tbsp flour

Recipe Directions for Potato Pancakes

  1. Combine ingredients in a small mixing bowl and stir well.

  2. Heat 1/4 inch of canola oil in a large skillet to about 325 F.

  3. Drop potato mixture by serving spoonfuls into hot oil and flatten into pancake shapes a little over 1/4 inch thick.

  4. Cook until lightly browned around the edges and carefully turn over.

  5. Continue to cook for another 2 or 3 minutes.

  6. Drain on paper towel & serve hot.
